Because Armenian cucumber is actually a melon, it ripens differently from regular cucumbers. You can eat them small, like a regular cucumber, but they don’t get bitter and weird textured if you leave them too long. They just get bigger. At a certain point, you’ll want to scoop out the seeds (like a melon) because they’re big and seed-y, but the flesh will still be crisp, juicy and fresh.
These have a long productive season. Quick to start producing and slow to finish.
